Would my kids be able to opened it easily

Yes, in the picture it looks like 2 Rock pieces, when in fact it's just one half with a white piece of plastic insert holding the key. It's super simple to open.

Does anyone know how to keep the keys from rusting when outdoors in this rock (even in plastic)?

My rock stays in garden key has never rusted.

What if someone thinks it's a real rock and throws it at my window? Will it break?

It is not a real rock; some sort of composite material. They would have to throw it pretty hard to break a window with it, I would think.
