Glad to find this organic light rye flour from Doves Farm, UK, as I could not find a similar product anywhere in the US. One would think that Bob's Red Mill would carry such a product; they make a non-organic light rye flour and an organic dark rye flour, but no organic light rye flour. Go figure... At any rate, this flour is used in my organic artisan sourdough breads and pizza crusts and I can now proudly say that my culinary creations are 100% organic! Light rye comprises about 8% of the total flour volume in these sourdough baked goods, but that 8% combined with organic unbleached white bread flour produces the perfect flavor profile that has resulted in a legion of fans. Looking forward to reordering this product soon!

Great Quality Light Rye Flour
For bread which calls for rye flour, you can use half whole rye with half of this white rye. It gives a somewhat lighter texture, but does not sacrifice the rye flavor.

Useful flour not always easy to find
I like to use this flour for feeding my sourdough starter and for flouring my board when kneading and shaping my bread rather than actually baking with it. My previous supplier closed and it has been difficult to find an alternative. This does the job although it is more expensive than what I used to use.
