Hello, do these start smoking by themselves or do you light them? Do you think they would work in a covered roaster in the oven?

The temperature of the burner causes them to smoke... not 'lighting necessary'... I cook at about 220 to 230 degrees which is medium high on my burner. And yes, they would probably work in a roaster in the oven too... but you'd need them to be on the bottom of that pan, and then the meat elevated above them... plus on the stove-top smokers (I use the Nordic one) it has a vent on top that also creates a chimney effect to allow the smoke to circulate.

No other ingredients are listed. They function like burning wood chips should. I have used for years but never performed an in-depth analysis. If concerned, contact cameronproducts.com. They smell, look, and smoke like just wood to me.

Can you use wood pellets instead of wood chips?

This product is wood chips... Not sure what you mean can you use pellets?? If your asking if you can use pellets in a smoking gun, it would highly depend on the smoking gun. These chips are very thin and small to burn quickly and produce smoke.

Perfect!

This is a good selection of wood chips. We are new to smoking meats or fish, and our DeMeyere stove smoker has not even arrived just yet. On YouTube I saw that people prefer different kinds of wood chips for different kinds of meat or fish. I guess we will have to see for ourselves what we like best. This set is a great selection. The containers were full (all 8, I checked), and we are ready when the DeMeyere smoker gets here.
