Does this heat up the room like a nesco roaster? Can I leave it on for several hours? Does it get hotter the longer left on, or consistent temp?

No that's why I got rid of my roaster. This is very nice. I like mine. It heats well. If the lid is up it will cool them off a bit but if the lid is on it keeps them hot..I've left mine on for several hours and haven't had any trouble. The stones will be hot but will cool off to the right temp by the time I use them..

what is the recommended way to clean and sanitize this hot stone unit after each use?

Spraya rag with sanitizer and wipe out.

How long does it take to heat the stones to a usable temperature?

Honestly as long as it takes to charge the sheets and the client to get on the table. They heat up quickly.
