Will each jar hold a pound of coffee?

if the coffee beans are dark roast it may be tight, but a lighter roast should not be a problem

I need a spoon long enough to get to the bottom of the jar when using to eat out of (a standard length spoon is too short)? Any suggestions?

Probably shouldn't eat out of them. The amount of bacterial growth from eating directly out of the container and re-refrigerating the unfinished portions are immense. That being said you could always use the longer serving table spoons or order some of the longer handled spoons found around here someplace. If you dont like either of those ideas you could alwasy just tape/clear epoxy two spoons, handle to handle .
