The smaller dicer says for sift fruits and vegetables. Woukd it hold up to dicing onions?

Yes, I use it to chop onions. But I put in half or quarter of the onion at a time, not the whole onion (In case that makes a difference to you :-).

Is the mandolin slicer adjustable

No but honestly I love this piece. Very sharp and cuts perfect. Well worth the money

Will the mandolin part slice things really thinly? Zucchini chips? Potato chips?

Yes there are a number of attachments to get the desired shape and thinness.
