They turned white i bet. that is great news as your plugs are thriving. The white "mold" as you say, is the mushroom MYCELIUM! Your in good hands.

Q: Would pecan wood be a good growing medium and could these be grown in full shade in areas in which summer temperatures can reach 100 degrees?

The company recommends a shaded and moist environment so your shady areas should be good. Don’t know about the pecan wood though

Q: Can these be used with Pine? (specifically red pine)

Pine is not good at all for Shiitake inoculation.
