Is the cooling fan supposed to be running all the time?

Does this system produce stereo (left and right) channels for each zone on the 70v? In the pictures, it looks like it is bridged mono sound per zone.

No. Like most 70v amps, it can only output mono.

Anyone able to manage multiple zones with in wall knob amps?

Sure, why don't you crank each zone up and install in-wall volume controls to match the speaker settings re: 70 volt, 8 ohm, etc..
