A Great Alternative to Kyocera Knives
The 6" Shenzhen Chef's Knife is a great product, and the price s a great deal easier to pay than the price of a comparable Kyocera knife. A couple of years ago I decided to buy a Kyocera knife for my wife, who makes hundreds of egg rolls many times a year. Her steel knife was no sharper than a butter knife after innumerable rounds of vegetable prep for her egg rolls, and I thought I could make her chore easier. It turned out that the knife was just what she needed, and that it made the job a far easier. Well, that was 2 years ago, and despite the fact that ceramic knives hold their edge better, even they get dull. When looking to get her another new ceramic knife, I stumbled on the Shenzhen Chef's Knife. Ceramic is ceramic, so I figured out that this would work as well as Kyocera. It turns out that it is comparable in every way, but the price. Both knives are ergonomic, and both knives are sharp enough to shave (when new). I have since discovered that there are sharpeners made specifically for ceramic knives, which may lengthen the time between further purchases of these excellent knives. But, if you don't have one, and you need a truly great knife for slicing vegetables, fruits, and even boneless meat, this is the way to go. If anybody asks me for my suggestion, I will enthusiastically recommend a Shenzhen ceramic knife. Get one and see if you don't find how nice they are. UPDATE: It is now Feb 19, 2021, and we still have our knife. It's not quite as sharp, but is still in one piece, and functioning. Reasonable caution will prevent chipping or breakage of the tang. Sudden lateral forces, or trying to use it like a cleaver, will likely break the blade. The ceramic material is far stronger than steel, but because it is far higher on the Rockwell hardness scale, it is much more brittle. After 10 years, I'm still happy with my purchase.

Comparable to more expensive ceramic knives
I've been waiting for ceramic knives to come into the consumer price range, and the Shenzhen product is a great tryout for those who wonder if they'll like ceramic better than metal. (Ceramic blades tend to be a little thicker than their metal counterparts.) I've been comparing this knife to a similar product from Kyocera which costs about twice as much, and so far, I like how the Shenzhen holds up. I may even like the Shenzhen handle a little better, as it encourages a better and more functional grip than the home cook normally uses. For the usual sorts of kitchen duties it works as well as any other knife in my collection, with the added benefit that the ceramic doesn't discolor the foods that a metal blade might. It doesn't have the same weight as some chef's knives--and to be fair, I favor those that come out a little more on the light side anyway. My Victorinox Fibrox chef's knife is still holding sway as my favorite, but this may change soon. (Yes. You can't put it in a dishwasher. It's not hard to clean--90 seconds at most, including drying it. Why would you ever put a good knife in the dishwasher?) Remember that there are still some reasons you need to have steel blades around. You can't use this to pry bones out of sockets, or cut frozen items, or smash garlic with the flat of the blade. Zirconium oxide makes a very sharp blade, but a brittle blade. (That's chemistry. No way around it.) Nevertheless, I'm pretty sure you'll find yourself reaching for this for a lot of kitchen cutting tasks. I know I do.

Super Sharp
Great Knife, Super Sharp.Wanted it to slice up lettuce without it turning brown, Would be better with a sheath to protect the blade, I put it in the bottom half of the box it came in, and luckily it still fits in my cutlery draw, I would HIGHLY recommend.

So far so good
I really like this knife so far. It was a replacement for a Kyocera ceramic knife which I used for about 4 years and finally chipped. This one is like a third or quarter of the price and it works great. I really like the size. perfect for basic cutting like some vegetables and occasional chicken. I don't cut bones and stuff. Very sharp. I have no idea how long this one lasts but so far, I am very happy with it.
