Can it easily be opened without a tool (i.e. screwdriver to pry it)? The panel will cover something that needs to be accessed in case of an emergency.

You would need a flat head screwdriver or a small key to pop it open. If you're afraid you would not be able to open it quickly then just drill a hole or two through the cover and install a cabinet knob or handle. It isn't closed that tightly so anything that can pull it a little bit will pop the door open.

Can this be used for 3/8 sheetrock

Yes. But you will need to make sure you can recess it deeper in so it will lay flush.

Can it be installed in a ceiling of plaster and lath, 7/8" thick?

Access Panel Installation should work with a Plaster/Lath ceiling or wall as it does not fasten mechanically. Simply cut the hole as directed on the instructions then dry fit for alignment. Once satisfied apply a bead of adhesive caulk to the lip of the frame and re-insert.
