Q: What make/model 120v electrical box is sized to fit the 2-13/16 x 3-3/8 power knockout on the box's bottom?

I just used a plain Jane metal box to attach to the bottom and grounded it

*ANY* metal cabinet will adversely affect WiFi (radio) signals. Plus, most installation locations for SMC cabinets are not ideal locations for WiFi AP's anyway. For this reasons, I don't recommend Router/AP combos in SMC cabinets. Instead get a router with POE capabilities (such as Ubiquity Edge Router or Security Gateway), run Ethernet to a location better suited for your AP, and pair the router with a POE AP (such as Ubiquity UAP-AC-PRO). You will NOT be disappointed with this approach. Larger homes may need multiple AP's, but my 3400sq ft, 2-story home is easily covered with this solution.

Q: The latch on the door doesnt hold it in place, it seems that the latch is facing the wrong way, anyone else had this experience?

Mine came the same way. You can use a pair of channel-lock pliers to squeeze the latch and flip it over. Minor issue compared to price for this with door.

Q: Can the door be reversed so that the hinge is on the right? I suppose you could mount it upside down but then the j-box would be on the top.

The door can be mounted on either the left or right side. There are holes on either side of the frame to mount the door. The latch mechanism on the door only grabs the lip of the frame (which is the same on both sides). I have mine configured with the hinge on the right and have no problems at all.
