The description says esd mat, however i am not seeing anything in the description that says anti-static. is this a true esd mat?

Purchased one of these for work. They test at either out of limits or upwards of 1x10¹² ohms using a Desco 19291 Surface Resistivity meter, so they are expressly NOT esd safe. I will give it credit that it's pretty big and probably solder heat resistant, but don't trust your electronics on it.

What parts are magnetic?

Two of the smaller squares are magnetic.(these sections are imprinted showing the two magnetic compartments)  That being said, they have a pretty weak magnetic field, I replaced them with n52 dime sized magnets.  On the underside of the silicone where the magnets are placed, the magnet area is semi sliced and perforated, so putting in a better magnet doesn't require any modification, just take the old magnet out, then slip the new magnet in.

This is a good THICK mat, I have one on my hot air station in my shop, and I also cut off the boxes and indents, except the perfectly flat mat itself.  The newly configured mat lives underneath my kitchen tabletop pressure oven.  My countertops are granite, but a good friend cracked his Corian counter with his Air Fryer, he was now using a wooden cutting board under his air fryer until I bought his family this.  I keep one under my pressure oven, and one under my dehydrator.

For the dehydrator, there's not a lot of heat involved, but it makes a nice crumb collector and gives me piece of mind. Not concerned with it being food grade or not, it's a heatshield, not a dinner plate :)

What is the best way to clean and dry this mat?

I've found that light scraping and skiing off all the dirt then using rubbing alcohol to be good, you could also use warm soapy water. To dry, pat down with a paper towel and then let air dry
