Yes, you can. I did. You can add powdered skim milk whisking it to milk, before the heating part to 180 degrees. Or in a separate bowl with a little of the milk before adding it and heating the milk. Or add powdered gelatin or agar agar or arrowroot powder, or cornstarch (I used cornstarch 2 tablesp to a quart, slurrying it and adding to the milk before heating). It will thicken admirably. The constant temperature will do the rest.

I wish! No getting out of bringing milk up to a boil then cooling to 110 before adding culture prior to slow cooking for hours, but the result is nice. It's always easier to just buy Greek yogurt from the store.
