Can I remove the original padding to put those on?

The old ones should be removable. They might stick a little from being on for a long time. The new ones stretch right on.

Are the paddings made of latex or rubber?

No it's like cloth but it has like a padding underneath it they fit the crutch perfect they stay on and my arms don't get sore so they're great and I would order them again and again

Do these underarm pads and the hand grip cover/pads fit on Guardian brand crutches?

They did, very good, i recommend them

Do these slide around much? I've seen reviews of other brands of pads in which that is a concern.

No they don't slide around. However if you remove the padding that is on the crutches to use these the padding isn't quite enough. My boyfriend stretched these over the original padding and the comfort was outstanding.
