Which type of oil is used for roasting?

This is what it says on package”Peanut oil and/or cotton seed oil, and/or canola oil.

Why does it say 5# & 2 #?

It's a 2-pound bag, so I'm not sure why the size says "5lb." It's definitely not $4.45/lb. since the total price for 2 lbs. is $22.45. They need to fix this.

Gluten free? Processed in facility with wheat, dairy?

I am not the manufacturer so I can only tell you that the bag states "Packed in the same facility that also processes peanuts and tree nuts". It also has a toll free number you could call and ask for further information toll free 8585.934.6868. i can tell you that the nuts are delicious.

Sodium content per 1 ounce serving?

The sodium content is 100 mg per serving. Each serving size is 28 g. You really can't taste any salt on them. This is not a great answer, but it is all I know. I took the information off of the bag.
