Is the handle stainless steel?

Yes the handle is stainless steel. We love these pans and they are beautiful too

Why is my new pan sticking with food each time I cook, even with small amount of oil. Disappointed

I don't have any problem with my pan or my wok. I believe that a light amount of sticking is normal. The non-stick technique used in these pans, in my opinion, is quite good, especially considering the longevity of the finish and the tolerance of the surface to metal utensils.

is the cooking surface 12 inches for a 12 inch pan?

The flat bottom surface of the pan is about 10" with sloping sides that expand the rim to 12". I love this pan as a semi-pro Chef!
