Product info says they're 1 inch wide. I would leave at lease 1.25 to be safe.

May I use one pair of hinges for a 36 inch wide panel?

The hinges are strong enough that they should work as long at you are still using them for what they are designed for, a sink front panel. A lot depends on the size of the panel and how heavy it is and If the panel has any flex which may cause a problem in the middle. A regular sink panel, even 36" long should work.
