I bought a loaf of carbonaut bread at whole foods (owned by amazon) for $6.99. why is this so expensive???

That sounds like the regular Carbonaut bread price (containing wheat protein.) The Gluten Free Carbonaut bread sells for about $9-$10 a loaf (if you can find it locally anymore.)

Does anyone have any opinions as to whether or not this bread would integrate into a low carb 'stuffing' recipe for my Thanksgiving turkey dinner?

It’s high fiber but low net carb. My label here says 15g carbs 14 of those carbs are fiber so 1 net gram of carb. Hope this helps. Enjoy your Thanksgiving!

There is also another white bread sold by this company, looks identical to this but has 2 g net carbs per slice. What is the difference?

The Carbonaut Gluten Free White Bread has only 1g. net carbs per slice. The Carbonaut White Bread that contains gluten has 2g. net carbs per slice. So that is where the difference lies.
