I have just purchased this item and i have brought a coleman propane/butane mix gas canister to use it with. do i need a the z1 lpg adaptor as well?

No igniter, but still a great little stove , light and easy to pack .

What was he cooking in the video?

Looks like he was steaming something? We bought one and have used it to boil a kettle. We bought this alongside a sturdy stand for the gas canister and use both. The only thing you'd need is to make sure it didn't fall over. The flame it creates is pretty good and I'm sure you could cook on it with a small pan.
