Is it easy to assemble

I haven’t put mine together yet, as we are still chin deep in snow. Looking at the instructions, and what not, it looks very easy to assemble. A cordless drill/socket set would the best to use.

Has anyone tried to paint this metal so it isn't as shiny? I was thinking a medium gray rustoleum paint that matches our house.

Can you stack these to get a deeper bed?

Yes you could stack them. It would make assembly more complicated but the hardware that comes with them should allow you to stack them.
