Takes technique
Getting the angle right and consistent is hard. This whetstone comes with an angle guide, but it's ALSO hard to use (hard to put on the back of the blade). It's a skill you just have to learn. There's a reason you pay to have knives sharpened professionally. On the other hand, it's not TOO hard to learn it. I watched a YouTube video, sharpened one knife, and it came out OK. Sharpened another, and scuffed the blade and didn't do a good job. Watched another video, learned more, and re-sharpened the botched job and fixed my mistake. It takes TIME to do it right, at least as I'm learning this for the first time. Anyway, THIS is the whetstone to get if you're a home cook looking to sharpen your decent old knives back to as good or better than they were when you got them. And it's fun testing it and proving to yourself that it worked. I took a green bean out of the freezer, thawed it in warm water, and sliced translucent paper-thin circles of green bean. Woot! That was fun. Tomato? Clear-as-glass paper-thin wafers of cherry tomato. Pow!
