Are these thumb sticks shorter than the ones that come stock on the elite series 2 controller?

the 2 short pairs are the same height as stock.

Are these real metal like the original?

Hello, the materials is like the original(rubber and metal).

Will it work for an Xbox 360 controller

No, these thumb sticks will not work for a Xbox 360 controller, to the best of my knowledge. In fact, a better answer would be these *only work on Xbox Elite Series 2* controllers. Hope that helps.

What type of paint is used on these parts? Is there a sealant?

Hello, The type of paint is plating, yes there is a sealant on the surface. It is exactly because the surface needs to be with sealant, needing a clips to clamp the joystick which leads to scratch a little on surface.
