Will this work with hershey's chocolate syrup, holiday, 7.5 lbs. container?

I use it on a regular 7.5 pound bottle of Hersey syrup, not sure if the holiday version is the same. It's a little too long for the bottle but just need to cut the stem shorter. I just held it next to the bottle and measured how much of the stem was above the bottle top and added some for the threads of the pump and cut that much off. I use it every day and have been using it since Aug 2020. Works good. The pump sprout could be a little longer but it's long enough to be able to pump directly into a glass but if trying to move a bowl around under it if try to pump over a bowl of ice cream it it's a little short for that... but if tip it and pump it would work.

I have purchased the new 1/2 Gall (64 oz) Cholula, but the diameter is ~1 7/8", but this says it will fit - but is listed at 2 1/4", will it fit?

That's the difference between the inside and outside diameter. Yes it fits and works well!
