Not sure, but on one shelf I have: 2 big bottles of alcohol, 2 big bottles of peroxide, 2 big 32oz. bottles of tea tree shampoo, and 2 bottles of suave shampoo and conditioner with no stress on the shelf so far.

Q: are the shelves adjustable for taller items

No, they are a standard height. You can't adjust them without cutting the metal tubing that acts as supports.

Q: Can you just buy extra poles and sheif?

I bough 2 sets and made one 5 shelves high the other 3 shelves

No, they are not removable. Keep in mind if you put any weight on these shelves they will start sagging.
