Q: Would this hold a book open?

No. I tried a regular size paperback book and a larger one. The book stands up but it does not hold the pages open at all.

Q: What is the depth of the base for the entire stand, not just the lip depth?

The base where tablet would sit, is 1-1/2" and the stand is wire so you can bend to adjust depth. I have used it with my laptop and both 7" and 9" fire tablets. But , I then bought a Lucite stand which is much more stable. Wire tends to lose form and wobble if surface is not flat and smooth. Hope that helps.

Q: Can the table easel hold a 5x7 and 8x11 canvas?

I use this to hold my small iPad and kindle fire so it should work fine for the size frames you are seeking to use
