How do I gauge coverage per bottle? I want to use this for a card table wood from the 60s.

It depends how you plan on painting the table. Unicorn Spit is water soluble and can be thinned down to a wash, stain, or paint. It stretches out forever........very, very seldom do I paint full strength. If it's just a card table size, I'd just buy 8 oz and you'll have plenty I'm sure. Good luck, and prepare to become addicted. By the way, it MUST be sealed with a oil based finish.

Can you polyurethane over thus and keep the vibrancy

I am not sure about polyurethane. All the websites I had visited before doing my projects just suggest using light layers of tung oil to make the shine pop out.

I want to finish an outdoor table with Unicorn Spit. Will this combo gloss/shine retain its gloss/shine for outdoor furniture?

You need to seal it. I have many Unicorn SPiT stained things outside but I keep them under a covered porch not out in the sun and rain.
