Q: How thick is this pad?

Fully inflated to firm, it is a little over an inch thick. Even at this, i do not bottom out while laying in my side. I used this through-hiking in Yosemite last year, laying on unimproved ground with no issues

Q: Is it ill advised to put the mattress directly on the floor without a tarp/pad when camping? Say, in the forest

Yes. You never know what may puncture the pad. Additionally there is the issue of heat transfer between the ground and you. I believe the best practice would be to put some type of tarp between the ground and the pad. If that tarp had a layer of mylar, you will most likely sleep better.

Q: How hard is it to deflate and pack? I got a sleeping bag recently and I had a work out trying to stuff it back into the bag.

It can be done. I used this for backpacking. I never used the bag or folded it, just rolled to deflate air and rolled it and stuff it in the backpack.
