COAX (TV Cable) and Cat5 (internet cords) are considered low voltage and do not follow the same codes as regular electrical cabling.

Outside of cosmetic differences, and those are slight, I am unable to detect any reason for the new product. DO NOT do like I did and order the top section only because it looks too good to be true at $29.XX

Q: Is it safe to run power cables(PS5,Switch) behind the wall or just video/ethernet/audio cables?

The kit uses Romex cable, with is code-compliant. Romex is the same type of powser cable that's alresdy installed in the walls to power light fixtures and wall outlets.

Q: Can I get a 3' extension cord instead of the 6'?

You’re referring to the extension cord that bridges the power inlet to the existing receptacle, right? I don’t think they offer anything other than a 6’ cable. You could buy your own 3’ three-prong cable, though.
