Answer for how many packets says 16 & 14, but description on the product says, "NEW-12 packets!"??? There's suppose to be 16. Where are other 4??

Is it gluten free? Do they have the same idea but with caffeine?

Yes it is 100% gluten free. And Each cup contains about.025 mg of caffeine, which is basically caffeine free. Don’t listen to reviews saying it has 80mg of caffeine. That is false information and they are clueless.

On the pH scale, what is the alkaline rating of this product?

Their web site says it’s the most alkaline coffee you can drink.

Which ingredients are organic?

All ingredients are labeled organic. Mainly I love the taste and it is a worthy substitute for all the coffee I had to give up in order to regain my health. For me that was much harder than giving up soda and alcohol and even my beloved fresh lemonade.
