Will these work for 5/8” thick shelf?

Yes but you will have to be very precise in drilling the holes

Will this work with 1/2” plywood shelves?

It would be difficult to do with 1/2"plywood. There will not be enough would remaining after drilling hole for the bracket to support the bracket without braking through the wood. Even if you were able to center the hole perfectly and get the bracket in the wood would not be able to support much weight given the lack of remaining wood.

What is the max lbs the shelf can hold if NOT mounted to a stud/brick wall and just with the provided anchors?

This is not good. You must mount to a stud or a brick wall.
