Q: Please advise as to how two holders can be connected side by side to get 3 volts. End to end works fine. But, side by side puts both poles together

You can simply flip one of the D-cells around so that the positive terminal contacts the spring end of the holder and the negative terminal rests against the non-spring end.

Q: it appears the "D" positive terminal does not make good contact with the copper rivet unless i use a piece of aluminum foil as a shim. suggestions?

The one I got makes good contact.

Q: Can wires be soldered to the connectors?

Yes. With proper preparation (light sanding) and flux.
