Q: is this dishwasher safe?

It didn't specify on the package. I would recommend a quick rinse after each use or top track placement if using a dishwasher.

Q: Is it adjustable to slice home made buns of various widths?

I do not think it will work to your satisfaction. The two arms will adjust to the width to some degree but the thickness is not adjustable.

Q: Would this work for the "bagel thins"?

Probably as it is just a holder for the bagel.
