Make your own non fat dressing
When I could no longer get Good Seasons non fat dressing packets I decided to make my own. I observed that using a standard dressing and simply leaving out the oil by replacing it with water did not work well. The dressing immediately separated. So I ordered some Xanthan gum and added 1/2 teaspoon of the Xanthan powder to the dressing powder, mixing well. Then added the resulting powder to about a 50-50 mix of water and vinegar, shaking well for 1 minute. Presto, non-fat dressing.

Good alternative
We're trying to go gluten free and this was the first time we've used Xanthan Gum. Can't say if it did anything to the recipe because we didn't like the bread recipe. We will try it on other recipes and it's noted to be safe for an ingredient.

Thickening agent.
This ingredient is great for thickening oil based salad dressing, it keeps the oil from separating from the other ingredients even when refrigerated.
