Can you plug a single stereo 6.35mm cable into one of your 4 inputs, and will it stay stereo?

Each input is a mono input. So you would not have stereo if you put a stereo signal into the input. The inputs are balanced, meaning they have the same number of a connectors as an unbalanced stereo input, but they aren't being used in the same way as the headphone output of your phone or something like that. Instead of offering two unbalanced signals, it's supporting one balanced signal per input.

Can this be used standalone as a mixer without a computer?

Absolutely you can use this as a standalone mixer if you like; the headphone monitor port could be used as output but there's also RCA jacks on the back as well.

Can u use this without computer.. just a speaker for outdoor gig?

Not sure, there is probably a way to but don't think of it like a mixing board either. You're much better off just finding a cheap multi input mixing board for like $200-300 rather than getting a standalone audio interface, that is directly designed for recording not necessarily outdoor gigs.
