My 9 year old daughter has gripping problems. She wants to cut meat/veggies. But not comfortable with steak knives etc.

is this good for 7 y-o or more for younger kids?

I bought it for a 5 year old, but am told the 8 year old really liked it too. Their Mom says it's actually a pretty good knife!

What is the diffrenence between this knife and nylon knives? Which is easier to cut with?

The blade is stainless steel, and is much more durable than a nylon knife. It is a safe knife for a child, thus it is not very sharp. However it makes a good knife to start with for a learning child.
