Can i use this to grease my brakes instead of silicone lubricant?

No. Copper grease is an anti-seize compound designed to operate at extremes of temperature, but it’s not a lubricant.

will this work on a stainless nut & bolt for a wood burning stove?

Have not tried that application, but we use it on auto manifold nuts/studs, it's a similar scenario so I certainly would try it.

Can I use this for spark plugs?

You can use it like other anti-seizes but manufacturer dose not recommend using any greases on spark plugs threads .
