How do you make the lines appear on both sides?

Cookies always have a flat side, these do too. The lines appear on the bottom when you take them out of the pan. I do not see how one could score them on the top of the batter to have both sides marked, or even why you would want to do that.

How big are the individual mandalins?

The individual mold measure 3 inches but in baking they shrink to about 2 3/4 inches. I hope this helps. I love this pan.

what are the dimensions of the individual cups?

They are larger than what I used in a pastry class in Paris. They are 3” tall and 2” at the widest part of the shell, tapering down to 1” at the bottom. Same size as the William-Sonoma pan. Cakes come out beautifully, however.

Is this pan dishwasher safe, or will it corrode like aluminum baking sheets if you put it in the dishwasher?

I don't know. It seems sturdy enough. I don't put my pans in the dishwasher. Don't want them to discolor and that could be the case with this pan.
