what is the best glue to attach them to plastic?

You'll need to use super glue. A plastic glue/cement won't bond well with the magnet. I've been using Gorilla brand glue to attach arms and weapons to Warhammer miniatures. So far works well.

Is there a datasheet for the 3x1mm magnets by any chance?

If you are looking for white sheets for magnets, then you should not be purchasing them from amazon, but from a scientific house. Alternately if you're just looking for the gausse radius or magnetic force between objects buy em.
