Why is half of the stickers Yellow and the other are white!?

The sticker is attached to the yellow paper, so it looks yellow, actually it is transparent.

How do I remove old decals

In the end I did not use the set from Amazon as the new decals did not match my buttons. If you search YouTube videos, you will find demos on removing the old decals. I used a new plastic putty knife from the home center.

Will this fit a 2014 g550? the round center radio button (which i need) appears to be larger than in any of our other mercedes.

They are not sized as advertised. Not worth the time.
