How do I connect 2 of these steering wheels into 1 nintendo switch so 2 kids can play (with their own steering wheels) at the same time?

There are two USB ports on the side of the Switch’s dock and a third in the back by the HDMI port. Just use any of those that are free. The Switch will also recognize a usb hub through those ports as well. Hope this helps.
