Planning on using them in a DSLR camera bag, how often do they need to be replaced. Living in moderate-high humid climate?

would depend on how tight your camara bag is I have a 18x18x24 inch telescope bag I use 8 small bags in there I change them every 3 mo just to be sure.

will they work in shoes?

They will absorb moisture although I don't know if it would help odor or not. We use them to keep scuba dive boots dry when stored and it keeps them from getting mildew smell.

It is described as "meeting fda specifications for food and drug products". does that mean that it can be used to keep foods and herbal medicines dry?

seriously, un packaged foods? common sense big NO!
