Recipes Mint Adjika Tsago’s Blackberry & Grape Sauce Savory Peach & Tarragon Salad Plov with Pumpkin, Chestnut & Walnut Zahir’s Stoned Chicken Vine Leaf Dolma Armenian Cognac Profiteroles Red Basil Sherbet Review: despidieron al maquetador y al ilustrador. la fotógrafa no se lo tomó en serio. - Me ha gustado porque es un primer acercamiento a la cocina de la zona. algunas recetas son poco realistas respecto al hecho de conseguir ciertos productos o tal cantidad de ellos. también son poco realistas algunos de los modos de preparación de ellos ya que usa métodos tradicionales. algunas recetas son muy simplonas y decepcionantes en creatividad (uno puede pensar que al ser cocina tradicional no hay cabida para la creatividad pero la autora sí que decidió modificar platos pero no llega a ser innovadora, se queda a medias) . compensan otras recetas y sobre todo compensa que son "exóticas" para quien no conoce la cocina de la zona. lo que aborrecí fue el maquetado. lo aborrecí con todo mi corazón. para empezar tomaron la decisión de no traducir los nombres originales de los platos al inglés. o sea que no sabes ni qué vas a cocinar porque encima hay un montón de recetas sin foto del plato. he tenido que acudir a google para entender de qué iba la receta y para descubrir unas de las más interesantes. esto se hubiera solucionado con fotos del plato y traducción del nombre del plato al inglés. después la tipografía y el modo en que acomodaron los textos hacen que sea difícil de leer. es poco intuitivo. además la belleza que se muestra en la imagen de la portada no vuelve a aparecer dentro del libro porque mandaron al ilustrador a freir espárragos en vez de permitirle estar presente a todo lo largo del libro. hoy en día hay una calidad inmensa en los libros de cocina. tanto. que ellos mismos son piezas artísticas e inspiradoras. este no es el caso. El maquetado de Mamushka era más intuitivo y atractivo. por último hay un montón de fotos que eran prescindibles y otras que eran imprescindibles para entender los platos pero no las pusieron. y aunque son fotos actuales parece que se hicieron hace 30 años. si bien retratan la austeridad actual de la zona y recuerdan el ambiente soviético de hace 30 años y eso podría considerarse un acierto, la composición de las imágenes desde un punto de vista artístico o desde el punto de vista de la fotografía de alimentos tienen muy poco valor. me. valió más la pena entrar a pinterest y a instagram a ver fotos de los platos de la gente que tenía el libro y preparó las recetas. no es un libro que seduzca. I really loved Olia's first book - I bought it to feel closer to home/the East and it most definitely helped with that. Kaukasis on the other hand was a book that took me far out of my comfort zone. I have never been to Caucasus but I've always wanted to go, now more than ever. The recipes are beautiful, well written and incorporated into a beautiful overarching story about the region and its people. The recipes are definitely a little more complicated in this book because some of the ingredients that I have never even heard of but Olia provides basic recipes on how to make your own version or where to buy it online. So far, I’ve only ventured as far as making the mint adjika, which, guys, smells divine and like nothing else I’ve tried before. Scrumptious! If in doubt, do take the leap and buy this book. It takes you so far away but makes you feel you're at home.

What a great follow up to Mamushka
What a book! And what a great follow up to Mamushka. I really loved Olia's first book - I bought it to feel closer to home/the East and it most definitely helped with that. a cookbook full of charm
私にとって良い外国の料理の本とは、美味しい料理のレシピだけではなく、その背景にある文化や人々の日々の暮らしを垣間見ることが出来る本だ。KAUKASISはまさにそんな魅力に溢れた本だ。その地に暮らす人たちが作っている、そのままのレシピとその台所と食卓の写真。観光名所ではなく、人々が暮らす町や村の日常の風景。入手できない食材もあるが、作ってみた料理はどれもとても美味しかった。 A good foreign cookbook for me is not just delicious recipes, but a glimpse into the culture and the daily life of the people behind it. KAUKASIS is a book full of such charm. The recipes by people living there and pictures of the dishes,the kitchens and dining tables which people there use . Not a tourist attraction, but a daily scene of towns or villages where people live. Some ingredients are not available, but all the dishes I cooked were very delicious.

Great recipes from the Caucasus
I am enjoying this book, the recipes, photos and stories remind me of my grandparents and particularly my grandmother who was an amazing cook. I could easily see her in some of the photos. Thank you Olia.
