How thick is the included insole / How thick an insole can you fit without squeezing the top of the foot against the low toe box?

Its reasonably thick, certainly comfortable and would accept another average insole to be fitted but not a very thick one.

Can the insole be removed easily (to fit customised ones)?

Yes they can easily be removed but those in the boots are already exceptionally comfortable and fit the boot perfectly.

Description says suede leather finish , does this apply to all colours ? the beeswax version for instance looks like a standard leather finish ?

the waxed leather finish is a soft non polished finish , shows the distressing of wear and scuffs with a waxed feel to the leather , personally I like this look for what is a functional casual boot. this is not a suede finish, no risen fibres or napping.
