In my personal opinion, I would say too small. My son is 6 and he has already “outgrew” the top bunk and has moved to the bottom for more room & says it is more comfortable with space.

can the peak of the roof be left off? I have a short ceiling but hopefully not for long.

Yes. The roof doesn't have to be put on. I believe that was the last thing I installed and it worked fine without it.
