What is the maximum thickness a paper can be? Would this be able to scan a canvas board?

Maximum Scan Thickness is .003" (.07 mm). It will not scan a Canvas board or foam core. Hope this helps. CES Imaging

Does it come with case like seen on youtube?

It does include a tough wheeled carry case.

I'm looking at this for a museum application, to scan prints and maps. Due to their fragility, some of them are encased in mylar. Will this work?

Yes, it's best to use a sheet protector on documents that are fragile, have tears or done in pencil.

What is the maximum paper size that this unit can scan?
