Does this blade sharpen well?

Yes the blade sharpens well and is easy to sharpen. The steel is ThyssenKrupp X50 Cr MoV 15 which has a very respectable 56HRC Rockwell Hardness after heat treatment. It is the same steel as used by the likes of Wusthof and Zwilling Henckels

We recommend to hone the knife regular (every 6-8hrs worth of use) so the blade stays nice and sharp. Fine grit ceramic honing rods (10" or longer rod) work very well on our knives

I’ve noticed they have 2 8inch chef knives that look identical but  on is $55 and the other is $129 what is the difference  between them ?

Hi Shelly,
The difference between the two knives comes down to the type of steel, design and performance – the more expensive Japanese AUS10 steel knife is sharpened  with a 12-degree angle per side and is razor sharp. It has Japanese AUS10 Super Steel as the center core and 33-layers per side of stainless steel. After cryogenic cooling the blade has an incredible Rockwell hardness of 61. This means you are getting sharpness, edge retention plus stain and rust resistance. It has a Tsunami Rose Damascus pattern, is full tang, uses a military grade G10 handle and has an awesome 3-metal Japanese Mosaic. For this knife, we went all out to make it the best on the market. However, with very high hardness in carbon steels, comes brittleness (not a concern if used correctly). So, you should not be cutting on glass, stone etc. and not cutting meats with bones or trying to put any lateral forces on the edge of the blade as its very fine and designed for thin cutting. It is perfect for cutting all vegetables. The German Steel knife also uses a very good ThyssenKrupp German Stainless Steel which has a hardness of 56 HRC. This knife can take a little more abuse in the kitchen (still not recommended to cut on hard surfaces or to cut through bone etc.). It is very comfortable to hold and has 15-18 degrees per side cutting angle. The knives are priced according to the cost of manufacture and the quality of materials, so you can see the difference.
 
Both are great for cutting all types of food including vegetables so it will come down to your own choice and what you are looking for. The Japanese AUS10 knife is certainly a show piece with high performance, and the German Steel knife is a solid workhorse which is very comfortable to use.

Rockwell Hardness is HRC56 so is a great balance between hardness and toughness. The blade angle is 15-18 degrees which gives a sharp edge, but is also optimised for edge retention.
