The best, first thing to do is to find where the arms go (it may take a few minutes but you will find them) and then once you've put the arms on the rest will seem much easier.

Not in my experience. I spilled a little water and it reacted just as my original sofa fabric... some rolled off while some went through.

Do the foam pieces stay down with a couch with removable seat cushions?

They do, to a point. If the chosen cover is the correct fit, if on the edge of the fit measurements, go to the next size to ensure the best fit and they will work better. The foam does start to get smashed down inside the sofa. The first couple of times I took mine off to wash, I could see the foam starting to be affected. Now a few of the strips are pretty flat and no longer holding as well. I put it on my sofa with removable cushions, in August 2020.
