Missing pasta. Well this ingredient helps make a nice substitute. It is not pasta, but is a better substitute than some of the other crazy noodles out there for low carb diets. This is expensive, so I tried the small packet set of calcium and Alginate first. My husband’s face lights up when he sees me making these noodles. They are more like a ramen noodle and hold up well.

I was told, by a doctor, to order a UK version of Gaviscon because of its unique, effective formulation. Problem was, it contained excipients that were totally unnecessary. That's a common problem with both OTC's and Prescribed meds: Too many sweetheart contracts with providers of those excipients, too many kickbacks, etc. I found the active ingredients were Sodium Alginate and Potassium Bicarbonate. Cool. I ordered 00 vegan capsules, loaded them with 5:1 of the above, as in the Gaviscon, and...... they worked! It breaks down to about $15 for 100 capsules, much less than what you pay for the formulations that contain garbage that does nothing. Do your own capsules, folks. I'm really glad I did.Update 4/24: To cut down on my sodium intake, I switched to using Potassium Alginate with the Potassium Bicarbonate. The Potassium Alginate has the exact same formula and structure, except there's a Potassium in place of the Sodium. It works exactly like my original formulation.

I was amazed while making keto pasta (recipe by serious keto).The pasta, made with 5 ounces of canned white chicken looks and tasted like angel hair spaghetti. My son was also amazed when he tasted the pasta. He said “you really got something here!” He wants to learn how to make it himself. This stuff is really like the real thing, amazing. I am a diabetic with celiac disease and have tried many pasta replacements, and have given up on having pasta, which is a favorite of mine, until now. Please check out this keto noodle, you will not regret it!

The sodium alginate from Modernist Pantry is a good value, and there were no problems with service or speed of delivery. There's not much to say about the product, it's just what it claims to be: sodium alginate. I mix a small amount with baking soda to treat acid reflux. I don't detect any strange taste, and it gels like it's supposed to. Good product, and I won't hesitate to buy from Modernist Pantry LLC when this supply runs out.

Must boil for many hours before usable. Then, it coats everything quickly, very hard to remove from utensils used for boiling.
