How do I store this cheese for an extended period of time? (Ex: multiple weeks or months?)

I cut it into eight ounce pieces, wrapped them in plastic wrap, and then in aluminum foil and stored them in the freezer. Then I take out what I need the day before I plan to make pizza. I know the conventional wisdom is that you should not freeze cheese but, I have found that if it is for six months or less it does not significantly harm the cheese.

is this soft or hard mozzarela?

This would be considered "hard", as in you can grate it for making lasagna, pizza, etc. "Soft" mozzarella is "fresh" mozzarella which usually comes in a round or disc-shaped form and is usually eaten "as is" with other fresh "un-cooked"vegetables like tomatoes, etc.

Is the enzymes and cheese cultures used from animal source or synthetic ?

Milk. Pure whole cows milk. 😇

What kind of salt is used in this cheese?

I’m not sure but I think there’s not enough salt. Was a lil bland.
