Assertive scent and flavour
Unlike vanilla, lavender extract has a strong scent and is noticeable to taste. I made low carb lavender muffins using this extract, with no other strong flavours, and liked the muffins quite a bit. This indeed is for an experimental palette though, but refreshing nonetheless!
